Sweet Potato Jerky

Directions
Take a large garnet yam sweet potato, peel, slice lengthwise into 1/4" slabs. Steam slabs until tender. You can also put into simmering water. Place slabs on a rack or cookie sheet. Use a silicone pad or lightly spray the cookie sheet to prevent sticking. Slowly dry - dehydrate - potato slices in a very low oven no higher than about 135 F. A pilot in an old oven will often produce about the right amount of heat. Better yet, use a food dehydrator.
