Bran Muffins
From Cypress Inn in Carmel, California
A guest favorite and staple from the Cypress Inn.
Ingredients
1 box Raisin Bran
3 cups sugar
5 cups flour
5 tsp baking soda
2 tsp salt
4 eggs
1 cup vegetable oil
1 qt buttermilk
2 tbsp vanilla extract
1 tsp cinnamon
1 tsp ground cloves
1 tsp ground nutmeg
Directions
1. Preheat Oven to 400 Degrees F
2. Mix dry ingredients in large bowl. Stir in remaining ingredients. Mix well.
3. Fill Muffin tins 2/3 full. Bake for 15 min.
Notes:
Batter will last up to 4 weeks in refrigerator.
